The role You're the executive chef's right hand and the line's anchor: running service, holding ticket times and temperatures to standard, training cooks, keeping prep tight and the walk-in honest. Dinner service Thursday–Saturday, brunch and dinner Sunday. Four service days a week — Mondays through Wednesdays are dark.
